Sunday, April 08, 2007 Tip for a quick fish pie No photograph today, we ate it up so fast! This is not really a recipe, more of a tip which you can adapt to your favourite fish pie recipe..
I've always found that the worst thing about making fish pie is all that washing up: you poach the fish, you make a sauce, you get out a pie dish ..
I also think it improves the finished dish, because the fish isn't overdone by being twice-cooked..
Cut the raw fish into bite-sized pieces and lay them in your pie dish.
In other words, don't bother to poach the fish first..
For my fish pie, this is what I did: I made plenty of bechamel sauce with oil, flour and skimmed milk.
I topped the pie with a sprinkling of breadcrumbs and anchovies (I stirred the contents of a tin of anchovies on a low heat until the fish just started to 'melt', then stirred in some breadcrumbs)..
(It works just as well if you top the pie with mashed potato or pastry.
The key thing is to cook the fish in a hot oven for half an hour.).

Salmon and Haddock Fish Pie - Look Mom, No Bones! Winter arrived this week in Wales with a frost and an icy chill that some people like to call "bracing".
On the ride to my office, as I was thinking of ways to mitigate my parental guilt and make up for freezing my son, it dawned on me: Fish Pie, the perfect "welcome to winter" family meal..
She calls it Extraordinarily Good Fish Pie and, trust me, it lives up to the billing.
In a large saute pan, simmer the fish with the milk for 10 minutes or until the fish is flaky.
Skin and flake the fish (take extra time to remove any bones from the haddock!!).
Add the lemon juice, peas and flaked fish.
Place the fish mixture into a shallow greased ovenproof dish..
Add a layer of mashed potato on top of the fish mixture and top with the remaining cheese..
Serve, blow on dish liberally to cool down for smaller mouths then sit back and admire the apocalyptic devastation as your children devour the Fish pie with utensils, hands....whatever they can use to cram it in their mouths fast enough..

Malabar Spices...: Weekend Cookbook Challenge- Fish Pie
It is the fish version of the shepherd’s pie which is ground lamb covered with mashed potatoes and baked.
But now to link this common recipe to an actual cook book, a similar recipe is also there in Complete Fish & Game Cookbook by A.D.Livingston, a cookbook from the library.
In fact, next time, I would even add a teaspoon of a garam masala, our blend of whole spices, which would really add a richness to the fish filling.
Almost any kind of fish can be used for the pie, fresh or canned.
I choose Tuna/ Flounder/Tilapia fillets when using fresh fish, or canned tuna when in a hurry..
Fish-12 ounce (340gm) or 2 can tuna packed in water.
3.Fish: If using fresh fish fillets, clean and cook fish in a sprinkle of salt without adding oil.
When cool, flake the fish and keep aside..
5.Layering: Mix the white sauce with the fish filling.
Coat the baking pan with a thin layer of oil and spread the fish mix evenly.
